I was thinking 3/4 all over would be over kill... even for you.... big guy!
I went with the 3/4 not just for the extra strength. I did not want to have any sagging along the bulkheads. I also wanted the extra material for running screws into. Lastly, the seats are the fillers for the bed and to keep it all uniform I stayed with the thick stuff. Its not that much heavier anyway. The tops of where the old quarter berths were is 1/2 inch.
Not sure how much experience you have, but I think that would be doable and safe for someone that lived in Florida and that is flexible on when they leave and come back...Its probably better for me to not do any big crossings. I really did/do want to sail it to the Bahamas.

Thank you for posting about this paint. Paint doesn't need to be made for use in water? I'm only asking because I know nothing about it.
