Which winch bolts will work for me new winches?

We got by fine for a decade using a Danforth 8s, and carried the chain and rode up to the foredeck in a mesh bag, from our cockpit seat hatch storage. This on a Niagara 26 (no anchor locker at the bow). That anchoring setup held tenaciously in sand and mud. A little awkward to carry up the side deck, but not too bad. Those mesh bags have a sturdy rope handle.

Those of you who suggested anchoring possibly have never been near Lake Michigan. Overall, the idea is sound, but a quarter mile or more out in the lake with a 25 foot boat, in a two to four foot chop, you might not have a big enough anchor and/or enough anchor line to get an anchor to set.
I wondered about that, having sailed on the finger lakes (it would be 500 feet that far out!), but they mentioned considering it. You also need to consider what it is like to anchor in the impact zone.

But anchoring should always be on the list of options to consider. If the answer is no, then the answer is no.

My main concern was falling off while trying to pull up an FX23 anchor. With great holding power comes great size
You don't. You tie a fender to the rode (prusik hitch or rolling hitch) and let the rode go. Come back and get it next week.

Slipping an anchor is part of the drill.
