Fyi: had another overheat due to this repair.
The new hose I installed between the heat exchanger and the manifold was shorter and caused the heat exchanger to bump against the stairs/cover. Over time the hose came loose and fluid leaked out.
The temperature switch failed to trigger the alarm and I didn't notice till the anti freeze boiled off.
This was scary but the universal is tough and seems to have survivedm

Sounds like you have dodged a few serious bullets, luckily. Jesse has made a list of Catalina 310 Maintaince list that is a great reminder and easy to follow-Luckily we sail in the sweetwater of the great lakes so our schedule is not like saltwater boats.

On my 1988 C34 (destroyed in Hurricane Sandy), the heat exchanger had one of the short pipes rubbing against the bracket for 20+ years and it wore a hole. During a particularly hard tack, the exchanger slid a fraction of an inch, exposing the hole and dumping all the antifreeze into the bilge. Overheating of the engine quickly followed. I too, had no audio indicators until the marine smoke detector I had installed just outside the engine compartment went off due to the heat. :-(
