I think a great product to do counter top with is available at Ikea, the sell slabs of butcher block in walnut or other species

I did our island counter top with the oak 8 years ago, we don't use knives on it without protection, but it is great when putting hot platters out of the oven on it without any needed protection, looks great and is well made.

Hot metal rosters or pots do not leave a scorcher mark on the wood block?

They have not and our island is directly in front of the oven we always transfer from the oven to the island top without issue.

We choose not to use the butcher block island top as a cutting board, just didn't want to scar up the counter top, but I do have a piece of the left over block that I do use for food preparation. The slab at Ikea is about 1 1/4" thick and very nice quality, a bargain if you ask me. It was 79" long and 39" wide I only used 42" x 32 of it for the counter top.
I would consider this a great looking addition for a boats counter top.
