I would like to do this, I'm an automation integration engineer, so it's up my alley. I wasn't aware pi's are hard to find, I'll keep that In mind.

Check out the SignalK software package. That has plugins that can do all of the calculations and NMEA interfacing. I run it on a Pi but it’s probably also possible to run it on an old laptop to play around with and test. I use a Yacht Devices USB to NMEA2K adapter for the physical interface.
