Not my pic, but it was my inspiration. We bought one of these last year. It's not quite Yeti quality, but it is head and shoulders above the standard Igloo we had used for so long. It's smaller inside, but makes up for it by needing less ice. I'd buy it again.
Also note, the 30qt model fits perfectly in the cockpit. I use it for drinks so I don't have to keep opening and closing the food cooler down below. Light enough to move out of the way and take home. The 35 is perfect for the step.
I got my ES new cooler. Is there anything specific that you need to do to screw the step board on top? It just seems like there isn't anything in that lid for the threads to bite into.
I just used some slightly longer stainless steel course treaded screws. Is on there tight.
We decided not to use our step board. I applied some ornate non-skid tape to the lid instead.
I'm just now getting to install my echo smile cooler. It really binds against the fiberglass in the back. I feel like I can reduce close to an inch in height by removing the rubber feet on the bottom and it will help reduce the binding against the fiberglass. Has anyone else removed the feet from your echo smile cooler?
No, but I don't think it could cause any problem. The feet only exist to keep the cooler from sliding around, which it can't do in that location. A little gel coat scuffing over time would be the worst outcome I can think of, in a place almost no one will ever see.

I see what you mean! Can the cooler not be shifted forward at all? In the pic I posted above, you can see there is a good bit of fore-and-aft wiggle room for the cooler to move away from what yours is binding on.
I see no problem with removing those cooler feet. I'm just trying to figure out what's different between your boat and mine. I think I recall you have an '86? Swing keel?
There's also a possibility that your cooler and mine are not identical size and shape. Chinese stuff can be like that.
