Go for a extra long shaft which is 25 inches. I like the Yamaha high thrust 8 or 9.9 horsepower. 8 would be big enough. My dad has a 9.9 on his 10,000 pound Irwin 30. It pushes it no problem, big prop has a lot of power. Also does better in reverse. The main thing is to keep prop in the water, get the longest shaft possible for a bad weather day.

One inch of pitch equals one knot at 1000 rpm with no drag. Since you can't get much of a gear reduction on an outboard then going for a low pitch reduces slip and more and larger blades increases thrust. I turn a 13x15 three blade with a 3:1 reduction gear on 10 horsepower inboard 5.5 is my top speed with that engine power but at 4.5 knots I don't get stopped by head winds and waves.

I have a 8 hp high thrust, electric start, electric tilt Yamaha with controls on my 2006 Hunter 25. The yamaha is a great motor. I have the 25" shaft. It is quiet, starts easily, recharges the battery, and uses very little fuel.

For the size boat you have you need the 25 inch long shaft. I did see that evinrude/johnson had a 30 inch at some point but don't know much about availablity. I have mine mounted very low and it still will cavitate in the Albemarle Sound on my Hunter 25 in rough weather. It is very long shaft at least 25.

Ive got a pearson26w with an 8hp long shaft 20" works fine. a 20" shaft should be fine under almost all conditions. I would get a new motor and avoid grief with a used one
