I'm going with Pentex laminate
I was asking the same question a few months ago - got quotes and opinions from ~10 lofts including both production lofts from Doyle, North, etc, and local race boutique shops. Ultimately I decided to go with pentex laminate from a local shop. The price difference is less than 15% and by all accounts the performance difference in years 2 - 5 will be worth it. Interestingly, everyone told me there would be almost no difference in the first year, and that after 4 or 5 years the dacron will be holding up better. The biggest difference is in the way the sails need to be treated - I kept hearing: if you're not willing to treat the sails right, buy dacron - it will survive being abused longer. YMMV
