There is so much that can be done! First I guess you have to decide how you want to use the boat. I only over night with 2 people max. so have been thinking about cutting into the vee berth so as to enlarge the area for the head, and increase my storage space. Now I have 3 Vn 23's, so this is my idea for just one of them. I will start by fitting the floatation foam all up into the bow. Then maybe adding a little. Then putting a bulkhead up where it comes to. Then leaving at least 12" between the hull and my cut, cut the vee berth, upto 12" from the new bulkhead, to open it up. Then adding a floor and shelves under the shelf made out of the old vee berth. Others that actually have the vee berth for sleeping have added an extension, so that the vee berth is longer. On some the extension lifts, for access to the head, on others they move the head to the floor infront of where it normally sets, and add storage where the head was. Some have opened up the bulk head between the settee and head to give the boat a roomier feel. Most have removed the original galley. Some have made a roll out galley that slides back into the very small area that is the quarter berth. I guess the best idea is to make mock ups of your projects, sail with them in place and see if they will help or are just in the way. It's better to throw out a cardboard galley that would have been too big, or small, or useless, than to spend the time and money building a project that won't do what you want it to do.
