Hunter Legend 40.5 water in oil

Yesterday we found brown thick oil up about 4-5 quarts. How can water get in there? My mechanic said it probably backed up through the muffler. He suggested putting a loop in the exhaust just before it exits the transom to prevent reoccurrence. Any other ideas? We had following winds on the last sail, but no big waves.
