I've always heard that the length of the boat * 2 is a good starting point.
I started with 75' for my furling line about 3 years ago. Just this past fall I cut about 10' off and still hang about 8' off the railing when my 135 Genoa is deployed. That works well for me.
The minimum line size I want to handle, by hand and while under load is 5/16" . Other than my jib sheets, which are 7/16", all my lines are 5/16".
