I also removed the poor condition alcohol stove in my boat and use a Coleman propane camp stove in it's place.
When I cook on the boat, it's only at anchor or in the slip.....the pop top is up and forward hatch is open for good ventilation. It's usually morning and I'm perking coffee, frying sausage, bacon, eggs and pancakes.
I use the little 1# disposable bottles you can buy at WalMart....they last a long time for my use. I've never had an issue with one leaking....unscrew it quickly, and if it does leak, then screw it back in and try quickly unscrewing it again. That always works for me. I also keep the little can outside the cabin in a small utility compartment isolated from the interior....so if it did leak, the propane would pool in the bottom of the cockpit and out the transom drains.....and that's only if there was zero wind to mix/dilute it. The bottle I have now is only 1/4 full so there's not enough in there to make a difference in my breezy marina.
I've been thinking of a solution like yours.....mounting the stove....but I decided I like the ability to store the stove back in the QB and using the space for a counter top and storage below.....plus I can use the stove out in the cockpit, rooftop, beach....Good job though on yours.
