C-27 By Far
The C-27 will sail a lot better. The C-25 is a compromise since it was made to be trailerable. It's a fine boat but doesn't compare to the C-27 in sailability or livability. Most prefer the outboard version of the 27 (check the archives) and the standard vs. tall rig will depend a lot on where you sail. If you have a lot of high winds (like SF Bay), the standard rig will be fine and you won't have to reef as often. Otherwise the tall rig is probably the better choice. You can always shorten sail, but you can't make them bigger.
