Salmon

Salmon w/ couscous and salsa. Grill the salmon, cook the couscous. Layer the couscous, then the salmon and top with homemade salsa that you made at home. Fabulous!

Pork Tenderloin Cubano

This Saturday on our overnight cruise, we had: Pork Tenderloin Cubano http://www.epicurious.com/recipes/recipe_views/views/5874 with a nice salsa, fresh green beans & asparagus, fresh tomato & mozzarella; along with Mojitos, Cuba Libres and a Cohiba Esplendidos. Very nice! K

A cool salad....

Slice grilled turkey tenderloin and valalia onion, BBQ dressing (homemade) all over organic baby greens, tomato, bacon, cukes with warm corn muffins. Everything is done at home. Just heat up the turkey and onion, and the muffins. Assemble and enjoy. Yum....

Lasagna

I use frozen Lasagna(store bought or home made) to help keep the cooler cold. Makes a great meal after its done it's duty as an ice cube. :)

Depends on

what the trip was like. After some days we've had this year even a ground balogna sandwich tastes like prime rib. Normally, if we've been out all day, it's something light....hot dogs or hamburgs on the grill. We save the 'classy' meals for when we're at the dock all day 'socializing'.

Depends on the weather

If the weather is hot I like a good chicken ceasar salad. You can just get a salad kit & then add precooked southwest chicken strips. Refreshing! If its cooler out then grilled steak & vegetables is wonderful. Or we grill up chicken fajitas if we want something a little lighter. In cold weather nothing beats a good pot of corn chowder.

Depends on the weather too.

After a cold wet day the best is cream of mushroom soup with a coffee chaser followed by cuddling with the admiral. If it is normal hot sailing day then burgers from the grill, salad and a glass of beer or wine.

I cook according to the weather

on hot days I make a cold meat salad with fresh fruit and on chilly days I fix a stew with potatoes and carrots and onions. served with canned fruit. Wine is always a part of our meals.

that no very many sailors on this forum cook? The other thread about provisioning had about the same response. Perhaps many sailors are missing out on some of the more relaxing and enjoyable aspects of the cruising experience. We have seen some killer recipes and I know that cooking isn't for everyone. There has been a lot of questions concerning keeping the icebox cold on other threads so folks must keep more than beer and sodas in there. ;)

This discussion brings up another good question - what do you eat while you're underway? We don't do overnight passages yet, but if we're going very far we need to have lunch. What do you eat that is better than peanut butter & jelly yet easy to fix & eat underway?

Usually for breakfast I fix either filled

pancakes or muffins. I always fix enough to last the day. Breakfast is an orange, an egg fixed in some manner, coffee or tea and a little bacon. The bacon provides the fat for the bread. The recipes are almost the same, pancakes have a little more liquid. The filling can be raisins and nuts or dried cranberries and nuts or blueberries. That makes sweet pancakes, savory can be made with diced ham and diced cheddar cheese or browned sausage and diced hard cheese like parmigiano. Made plain they(pancakes ) can be spread with jam or wrapped around little smokie sausages. Grapes, cut apples, deviled ham and crackers work. Pancakes or muffins made with 1/2 cup flour, 1/2 cup rolled oats, 1/2 cup each of the fillers, 1/2 tablespoon baking powder, 1/2 teaspoon salt, Sugar for the sweet bread, black pepper for the savory breads, 1 egg a little melted fat and enough milk to make a batter. Change the rolled oats to cornmealand add a minced onion for some variety with bean dip.

how often do you barf thread.... While on the hook, Delmonico's on the charcoal fired magma grill with a salad of assorted greens and a good salad dressing. This of course would be with the appropriate before, during and after dinner drink/s of the day. r.w.landau

also comes up rule to work something must go down. My son turns green at the dock. My Nancy and I can fry chicken liver and onions in rough weather. Go figure. ;)

Shrimp on the barbie!

I am surprised that I am the first to admit it. Giant prawns grilled over pinon with a hot, sweet jerk sauce or simply dipped in tequila and drizzled with lime - peeled and torn apart with the fingers - with crusty bread dipped in good olive oil. Served with very cold microbrew (Old Chubb?) and shots on the side. (At anchor of course)

Ross, you made me feel normal

eating chicken liver. I have never fried them, I boil them with an onion and some celery and carrots and enjoy a broth with the chicken livers. The wife does not touch them!!!But on occasion will use the broth for other things. r.w.

R.w., Nancy and I boil them as you do, drain them

Run them in a food processor for a minute or so add a little salt and have a great spred for crackers.
