Usually for breakfast I fix either filled
pancakes or muffins. I always fix enough to last the day. Breakfast is an orange, an egg fixed in some manner, coffee or tea and a little bacon. The bacon provides the fat for the bread. The recipes are almost the same, pancakes have a little more liquid. The filling can be raisins and nuts or dried cranberries and nuts or blueberries. That makes sweet pancakes, savory can be made with diced ham and diced cheddar cheese or browned sausage and diced hard cheese like parmigiano. Made plain they(pancakes ) can be spread with jam or wrapped around little smokie sausages. Grapes, cut apples, deviled ham and crackers work. Pancakes or muffins made with 1/2 cup flour, 1/2 cup rolled oats, 1/2 cup each of the fillers, 1/2 tablespoon baking powder, 1/2 teaspoon salt, Sugar for the sweet bread, black pepper for the savory breads, 1 egg a little melted fat and enough milk to make a batter. Change the rolled oats to cornmealand add a minced onion for some variety with bean dip.
