anchoring without a forward anchor locker

My 1973 Catalina 27 has no on-deck forward anchor locker-how have those of you with this set-up sorted out the best way to set and retrieve the anchor?

I used to have a piece of 4 inch PVC a foot or so long lashed on the bow pulpit and a large mesh (plastic coated) bag on the deck. (large enough to hold the anchor line) I would haul in the anchor line and stuff it in the bag. then at the end put the anchor (back in first) into the hole of the PVC. Tie the bag off, secure the bitter end and off I would go. At the end of the day all would come off and stow in an aft hatch.

anchor options

I didn't even use a holder on the bow. Just pulled the sails up, weighed anchor, and left it on the foredeck while I got underway proper. As soon as time permits, go forward, coil the line, and move the anchor to back of cockpit to dry off. Eventually stored in locker once dry. It's nice to have a bigger boat with a dedicated locker, but still workable without one. If you anchor alot the PVC pipe is a great simple option. On my 1977 there was space forward of the v-berth (where the access panel to the bow lights is) that some people used to store the anchor line using a hawse pipe from on deck, but with Chesapeake Bay mud and worries of smell/mildew, I never went that route.

I'm using rubbermaid totes for my claw anchors and a burlap bag for the danforth. The oversized claw with 30' of chain is a beast but I figure better safe than sorry. The "correct" sized one I can manhandle in/out of the forward hatch so it's not too troublesome.

I went "whole hog" and bought a used 25# CQR, and with the chain, I figure that's 40-50#. So at a quiet mooring I tried a trial of lowering it over the stern/out of the cockpit into ~30-40' of water, and then bringing it back up again.

Whew!

I put a rubber mat I had on board over the gunnel to protect it so I could drag the rode/chain over the gunnel and "put my back into it", because just leaning over the side and pulling it up wasn't gonna happen.

And thinking of carrying all this forward, then carying all this aft-either I'll hurt myself or the boat, I'm afraid. That's what keeps me from installing a bow anchor roller-

I hadn't thought about hauling it up through the forward hatch, and then lowering it back down there afterwards-like you say, that doesn't sound like a lot of fun, either. And my under-V-berth "anchor locker isn't big enought for the CQR, so then I'd be lugging it inside to the companionway and up to the cockpit locker...

So I'm thinking about a stern roller for dropping and retrieving the anchor, (though still running the anchor line off the bow when anchored)-either permanently mounted on the gunnel or mounted on some sort of plank with that temporarily lashed to something aft.
