I have a1993 Hunter 30T. I may have to replace my holding tank. I have looked online for what size it is . I have found water ,37 gal, and fuel ,18 gal, capacities but cannot find holding tank capacity. Does anyone know what is or where I can find this info
If it's a rectangular tank, it's easy to determine the size: L x W x H in inches, divide by 231 (cu in/gal). Because you're measuring outside dimensions and because not every cu milimeter of space is useable, get a squirrely number with a decimal point. For instance something like 16.4327. 90% rounded up to the nearest whole number--in this case 15--is the usable capacity of the tank.

They make TOP quality thick-walled water and waste tanks for a very reasonable price and have more than 400 shapes and sizes, over 100 of which are non-rectangular, and they install fittings in the sizes and locations specified by the customer when they make the tank. There are retailers who sell Ronco tanks, but Ronco sells direct for a much lower price...and they're great to work with.
When looking at drawings it's important to know that there is no top or bottom until the fittings go in, and YOU decide where they go. So rotate, flip in any orientation to find the tank that fit your space.
Boat builders rarely if ever pick the best --or even passibly good--location for a holding tank, often putting 'em in inaccessible locations, resulting in nightmare hose runs and always just put all the fittings on one end...which is rarely the best place for 'em because putting 'em in a vertical wall loses capacity. I'll be glad to help you find a good location for it and the best fittings locations.
As for capacity...I see you're in GA. If you're on Lake Lanier (no discharge), 14 gal is a bit small if you use the boat much unless you want to pump out every week. Otoh, that's a decent size if you're on the coast and have easy access to open sea at least 3 miles offshore where you can dump the tank.
