Anyone know where you can get deck for there interior lockers? My very specific case is the air conditioner which had cutouts for the mounts. I am thinking of changing from Domestic to Webasto so the footprint is different and I will need a new piece of decking in that locker to properly mount.

Decking? A pic would help. But if you are talking about a base to set the AC on, a piece of starboard or other type of PVC board would be a good choice.
Along the same lines: I think this isn't a question of using the exact thing that was there when the boat was new. You're talking about something mounted inside the lockers, so you need to use whatever makes sense (plywood, plywood sealed with epoxy, starboard...), depending on how likely it is to get wet, what kind of weight it has to withstand, etc. There is no perfect answer: just do what makes sense from an engineering standpoint.
