Jib Sheets...Ugh.

Notice the difference, Jon has shroud rollers that do not cover the shroud fittings. When I brought my rigger aboard the boat for the first time he took a look at the previous owners fancy aluminum shroud tubes and said “we need to make them go away, they keep salt on the swages and conceal corrosion”. OK chief!

Which is why mine are ventilated, as shown above.

In my experience this happens when, during the tack, the person taking in the sheet gets ahead of the sail and drags it across the shrouds. The proper way to do it is to let the wind carry the sail across while taking in most of the slack. Maybe it’s just technique.

I think markwbird has likely identified the issue. That said, I too have a single genoa sheet with simple cow hitch knot.

@catalanc Those shroud covers are fine. Less chance of chafe. Just be sure that they are ventilated at the bottom. You do not want even rain water sitting in the base of the tubes. Not good for stainless.

We lash eyes spliced in our sheets to the Yankee's clew with some 6mm Dyneema. Never had a problem and it has yet to wear out after over 7 years, 3 of charter sailing.

If you have 2 lines and using bowlines, make one loop in the knot bigger than the other, that way they will lay flat together and not hang up as much. Also, as others have suggested, wait until the jib backwinds a little and will pull the sail through the tack much easier.

I also have an 83 Catalina 25 tall rig and recently posted about this problem as well. Based on suggestions from the responses, I switched to the "luggage tag knot" (aka "cow hitch" is the same thing). It solved the problem for me!

Some else had a great suggestion about making "soft shackles" out of dynema. I think that's a great idea, but since I have a roller furling and don't need to remove the line regularly I went with the luggage tag knot.

Another possibility is called the "blood knot" or "barrel knot" used with 2 lines, and seems to keep mine from catching as much, I use only 4 turns instead of 5 as some show. Can be seen on animatedknots.com and it shows how to tie it. I just pull the lines through the grommet then wrap as shown and it has never slipped through the grommet.
