Can a fresh water cooling system be converted for use in salt water? Cost? Difficulty?

Your 2GM20F can be used in salt water or fresh water or anywhere in between. The raw water cooling system doesn't know the difference. The freshwater side will have antifreeze and is a closed system.

Big question is...WHY? The system is pretty foolproof AND bulletproof as is...why monkey around with it?

I agree, why would you want to do this. It will just open up other maintenance questions that you would probably not want to deal with. You would probably not be able to heat water and your engine would not run as efficently.

drharvell...maybe we missed part of your thought process...you DO understand that your Yanmar is also cooled by the "raw water" it is sitting in, whether it is fresh or salt? No worries about moving it from fresh on your lake to salt in the Gulf or elsewhere...no "conversion" necessary.
