These 2 indicators are on the nav station area of my new to me 2008 Hunter 31. I don't know what they are supposed to do. Please advise! On the second one--what is the toggle for one and two mean? Thank you

On the left is a battery monitor. Right now it’s showing voltage of some battery (whichever is specter). Pressing the % button probably changes to show state of charge of that battery (assuming it’s configured properly).
The one on the right is a tank gauge. Since the “E” is shaded red I presume it’s for water tanks, not a holding tank. The toggle probably selects which one of two water tanks has its level shown on the gauge.

I was going to guess holding tank because it looks like a picture of a head next to the E

The gauge on the right labeled INDICATOR appears in the manual under the reference "Water Systems".
The gauge on the left was correctly identified by @Davidasailor26 as a battery monitor. It appears ot be an upgrade from the OEM gauge for the boat. The rough cut of the wood panel beneath the gauge supports this observation. Looking for details on the TR-16 Coulombmeter indicates it is a common Chinese-manufactured unit. You would need to find a seller or distributor to obtain a manual for the gauge. Said coulombmeters are considered unreliable.

Not necessarily. Hunter may have used the same gauge for boats with a single holding tank and ones with 2 holding tanks. On the single holding tank boats the second position is not connected to any thing.
All the Wema holding tank gauges I can find online have the red and the toilet icon on the full side. All the water gauges have the red and the word Water on the empty side. The OP has an interesting blend of both.
On my 38 the gauge on the right with the switch - left position is fresh water, right is holding tank
Great Scott man, I think you've got it. The one on the right indicates "something" for sure.
The symbol on the left is definitely a head and the symbol on the right looks like fresh potable water. The caution here is to watch which wires from which tank go to which side of the meter. If unsure, always flip a coin.
The piping connections requies a tad more care as you don't want the kitchen faucet pulling from the holding tank. That can be tested by tasting the liquid.

I was stuck on the word “Indicator” because it isn’t how an American company would label an instrument. It sounds like something from the British sphere. Not that there’s anything wrong with that.
