The wing keel only has decent weather helm when you are A) overpowered or B) untuned.

You can figure you are overpowered when you a heeling more than say 15 degrees on the WKSR.. get a LEV-O-GAUGE if you are unsure.

Maybe this will help, I don't have perfect trim, and I was just screwing around with the boat that day (mostly with the camera), and I had some REAL lazy tacks... but you can get an idea of heel and tiller position in some of it. Winds looked like they were 10-12ish (again just guessing, as it looks like this was early on in owning the boat).

PS: You'll see me adjusting trim to ease tiller in a couple parts of it. Basically if you have too much weather helm, you drop the traveler.

Cool, thanks for the video...

I've been sailing my boat mostly in pretty heavy wind, (12 - 20) or next to nothing. Haven't yet had what I'd call a great day, certainly not with the new 155. Tuning? Yeah, that is likely an issue as I've never touched it with a LOOS gauge, but have opted for the laying on my back, sighting straight up the mast technique (it's not supposed to be "S" shaped, is it?) combined with a fairly vigorous shake on the shrouds till the "yeah, that feels about right; uppers a bit tighter than lowers" point is reached.

Thanks again folks for all the advice. I definitely have a bit of homework and a LOT of sailing to do before I get too worked up about it all...
