Can any Catalina 310 owner advise on how to heat water when I don't use shore power and the motor is not on long enough to heat the water. I only use the motor for 15 minutes before mother nature takes up the power. Therefore when we stop for the night we have no hot water.

Maybe the others will have better ideas than mine, but the only way I know of is either to make hot water on the stove or use a black "shower" bag made to absorb the sun's heat and hang it from the mast.

Only way to get hot water is to either heat it up before you unplug from the dock or run the engine long enough for the heat exchanger to do the job. Once heated, it seems to keep pretty warm for a long time. Might suggest that you run the engine some before anchoring for the night.
