Too many large wires in circuit panel, is it ok to step-down large wires to 10ga for panel interior?

Same question as 'seem to have painted myself into a corner can this cause problems?'. I have used similar solutions as you proposed on low current panels that had a mix of long voltage drop circuits. Before you do that there are things to avoid pitfalls. Make an accurate wiring diagram of your entire system including wire size and color, label each circuit at both ends, if you have multi conductor cables label each conductor color and voltage-both ends, make a list of those circuits then at the top of the list put the day and date label it working. Make copy of the list label it beginning and put it in a safe place. Keep your working list up to date on 1/2 day basis you never know when somebody is going to offer you a free three day lunch.
A wire when moved should not break the thing that it is terminated to, if it does it has been incorrectly installed. Please don't ask me how I know. When you have made your changes to your working list change it to current revised with new date and put it in the safe place and put a dated current revised copy in the panel where you can use it for troubleshooting.
