Did you resolve your engine thermostat question?

I also have a M5444 and the manual specs running temp of 175 - 180 degrees.
The Napa thermostat (part number) THM 115 keeps my engine temp at 180.

Yes. Tested the thermostat in heated water and it works fine. it turned out the engine was in need of a flush, clogged with gunk that prevented free flow.

Thermostats have a weep hole that allows a small flow of coolant even when closed. Have you done the IR test on the thermostat housing? If working fine in the heated water test it really sounds like a gauge calibration issue. Another option to try, pull out the thermostat and run the motor without it. See what temp it runs at. The coolant tank is another place to check. Run the motor with the cap off and put a thermometer in the coolant to see what the temp of the tank is.

I want to refinished the cabin floor of my sailboat. It is strips of teak seperated by veny thin strips of some other wood or material. Anyone have experience on how to get best resuts?

You need to identify the material. Some floors are made of plywood with a veneer. The veneer is a thin skin. It can peal or you can sand through the material.
Other materials used are vinyl over wood, actual 1/8 wood strips etc. Each product has it's own "best practice" method.

Congrats on your Gulf Pilot. Capital Yachts built sturdy boats. The Gulf Pilot is a nice design for the Puget Sound. They track well making them comfortable cruising boats.

Back on the t-stat, it could be as simple as installing the t-stat upside down. Sometimes it not obvious, or counter-intuitive.

As others have said, the cooling system, with the t-stat, should hold the engine at the t-stat set temp, for a variety of reasons, not least of which is best fuel use. On my engines, once at temp they would stay there, pretty much, regardless of the load. If they climb beyond that you have inadequate cooling capacity. If they don't stay there, I would say you have a cooling system fault. Could be plumbed incorrectly, or something.
