I own a Hunter 260. In order to better trim the mainsail, I like to know the Hunter 260 Target Speed table for different wind speeds and directions. Where can I find that?

I do agree that you need target boat speeds. However, that has nothing whatever to do with sail trim. Target speeds are used by the helmsman to sail 'best' angle to the wind.
Sailing too high reduces boat speed although it shortens the distance sailed the net result is a loss. Sailing too low increases both boat speed and distance, again a net loss. Targets are used to sail the critical angle that gains optimum VMG.
