So, given a honda 2000 generator and electric desalinator, how many gallons of water does one gallon of gasoline become?

1:1 gas to water

Chemically, if you condense the exhaust you get one gal of water for each gal of fuel.
Practically, you just need to know the gal/hour output of the water maker and gal/hour consumption of the genset.
hours run time = 1 gal fuel/GPH
hours run time * gal water / hour = gal of water produced

A 1500 watt watermaker makes ~ 30 gallons per hour. a 2000 watt generator uses a quart of fuel per hour.

I think i'm going to start carrying gas, not water!

A typical water maker produces something on the order of 3 gallons per hour although there are all sizes. My H uses 1 gal in 4-5 hrs so that's 12-15 gallons. Your mileage may vary. How much water you need and your budget are the only two variables.
