Packing
The only way to really know is to pull one ring out..(or look in the book)haha Unless you have a very large boat it is more likely to be 3/16 or so?? You won't get much water(if any) in the boat if you just pull one ring, get a small packing puller or you can try an ice pick and put a small bend in the end kinda like a fish hook barb. If you can see the stuffing box easy, try to measure the gap between the shaft and the ID of the stuffing box. Well don't know if this helped or you already knew all this??
