Stem Fitting missing on Catalina 27

I recently purchased a 1980 Catalina 27. When I came to attach the jib tack to the stem fitting, I realized that there was no stem fitting. Has anyone come across this? Is there a quick and inexpensive way to fix this? What I have considered so far are a) add a U bolt to the bridge, but there is no reinforcement inside the anchor hatch. b) drill a 1/2 inch hole to the chain plate holding the forestay turnbuckle c) weld a stainless steel plate to the chain plate d) remove current chain plate and buy one that comes with a stem fitting.

You can get a replacement stem fitting for a Catalina 27 on Catalina Direct. They have a few different style stems depending on the year of the boat.
