I’ve sailed in the waters of Belize, but not the route you are going.
This book tells the tale of a sailor who took the trip. Found the winds contrary once out in the gulf. Ended up in the Florida Keys. When the winds changed headed out again and found his way on down to Belize. Along the way he shares the history of wind and the development of weather forecasting.

You may wish to join one or more of John Kretschmer's Captain's hour. They are divided up with the first half whatever subject is being talked about, the second half he takes questions from attendees. You can send in your questions ahead of time, or just ask during the question an answer time. I'm sure you will get a ton of excellent information for this trip. I think the cost is something like $25 a session - don't recall exactly.
