Sole Replacement

Does anyone know if there is a firm out there which does pre-cut sole replacement pieces? 2000 Hunter 340. TIA

Doubtful.

Hopefully you still have your original pieces as a pattern. Contact a GOOD carpenter to cut new pieces, attach strengtheners same as original, and varnish with about five coats of spar varnish. It's not going to be cheap. Might be cheaper to take a carpentry course and buy the needed power tools to replace the carpenter.

The real stuff is a bit of a pain but always looks best :

My dock neighbor had a company come out and photo image his deck… then a computer laser cutter made custom faux wood plasteak mats that dropped in. Looked FANTA$TIC!!!

You might consider refacing your sole plates (if they are sound) with Lonseal T & H or Plasteak. Both are synthetics that look like the real thing with the added advantage of never needing maintenance.
This is our boat with Lonseal epoxied onto the original sole plates.

I used PlasDeck which is usually installed outside on the deck and not inside on the cabin sole. I installed it inside purposely because this Vinyl material is thicker and the color is uniform all the way through. In case of scratches you can simply sand them off. My standard poodle has sharp claws and would destroy a nice wood veneer floor. The PlasDeck installation procedure requires you to make a template and they digitize that and then cut the Vinyl to exactly match with borders to your specifications. You glue that down with a polyurethane adhesive that they supply with the flooring. The finish floor is soft underfoot, waterproof, non-slip, indestructable, and attractive. However it is not as shiny and elegant as a wooden floor. Plasdeck, in Ohio, is a nice company to work with.
