Ok, looking at solar equipment, what type of solar charge controller would you recommend? I know MPPT seems to be the best but why? What brand do you all recommend?

Victron hands down is the best value. Be sure to only buy the ones marked "start solar" not "Blue Solar". FWIW I have piles of images of semi flexible panels that caught fire....Rigid panels are much longer lived.
