Slide-out galley modifications?

I am new C22 owner. It is an '85 model with a dinette and slide-out galley. The alcohol stove is missing and I have a grill for the stern rail. The dinette table stays down all of the time and I would like to get more use out of the galley (starboard) side. I have considered removing the galley and storing it to maintain the integrity of the origial design. I have also considered modifying the galley by cutting holes behind the stove and sink area to create cubbies for supplies in the area designed as the water tank. The stove area has a cutting board with fiddles on the edges. I use the sink to store my keys, wallet, etc. and have not missed having a sink. The ice box is used for food dry storage with a cooler in the cockpit. I will spend the night on the boat from time to time and might spend a week on the boat no more than once a year. There will be 2-3 people on overnight stays. I am a decent woodworker with no fiberglas experience. What have some of you done to maximize your galley space? Pictures will be helpful but any suggestions are appreciated.

I haven't seen discussions of this here with pictures because it came up well before it became easy to post photos. Your idea to "maintain the integrity of the original design" is a good one, because some people like the galley arrangement. We did - we lived on board all summer weekends and holidays, slid the galley back when not in use and used a home-built fiddled plywood board insert to sleep in the dinette area; we used the sink and the stove. The plywood insert fits between the inside edge of the lowered table and the inside edge of the starboard fiberglass edge under the galley side, stows aft when not in use. It becomes a huge sleeping area compared to the V berth. And for 3 people, two in the big dinette area and one up forward makes sense. For two, you get easier access to the head.

You could take it out and store it at home and build whatever you think you need there. The next owner could love your idea, or want the old galley back, so make it easily removable and not too intrusive. The only downside is the sleeping if something is there that gets in the way. If you don't need much storage, then leave the starboard cushion in place and purchase some small storage mesh hammocks and hang them filled with stuff. If you remove it, then you could get another cushion and use the starboard quarterberth for sleeping, too.

If you keep it, I recommend sliding the galley back anyway when sailing. While it has the groove(s) to hold it in place, I always felt leery of having it move when sailing hard on a starboard tack!

You could also check in with the C22 Association on their website, I'm sure they'd have some ideas.

galley options

here is what i have done with a 78 catalina it works great top drawer is charts and paper work, middle drawer is some food stuff and dishes and bottom drawer is for pots and pans stove and misc. the wood top that is in front of the drawer unit is a ice box that i made and has indents for the stove feet hope this gives you some ideas

Here's a shot of a lighter weight version that I made for Dumbo:

The sink was a steamer tray and the plumbing fittings from an RV store. The stove runs on butane canisters and is bolted to the galley with wing nuts for easy removal.
