simple plumbing for newbie-oday 25

So this spring will be my official first season with Joy, my oday 25 and I would like to spruce up my plumbing. I switched the small portapotty that the boat came with, with a bigger newer thetford porta potty 465 which I have to manually dump-but I am ok with this. I like the simplicity of it all and I already had the potty for camping purposes so no monetary hit there. Now on to the fresh water systems. In the fall I pulled out my fresh water tank and all the hoses. The galley and the head sink were both manual hand pump types which I would have also been ok with, but in trying to get the head faucet to work I broke it. The galley faucet worked fine so there was no need to tinker/break that. So I cant decide how I want to go about this. I am considering a few options.
1. cheap- buy a gusher mk2 or 3 or 4 foot pump and some kind of simple faucet and put that in the galley for hands free operation, while taking the existing hand pump one and putting it into the head sink, and also buying a new fresh water tank and all new hoses. Is there a good place to mount the foot pumps in the oday 25 galley??? The mk4 pump looks pretty cool it mounts flush.
2. cheaper- clean the fresh water tank out thoroughly,(it has no cracks in it but is a little swollen), get new hoses, and leave the hand pump sink in the galley and leave the head sink as a storage shelf.

I will bring my own bottled water for drinking. I cant imagine using the sink much at all-just pretty much for hand washing-and its not that far of a walk to the galley from the head.
Any thoughts, suggestions, recommendations, criticisms????
Does anybody out there have an oday 25 or similar with a setup that they would recommend???
p.s. I forgot to mention that I would like to add a deck fill as well

On my Oday the head vanity was all rotted from water leaking in through the chain plates so I eliminated it and then glassed over the thru hull for the sink drain. One less hole in the hull to worry about. I can do without the sink. I have an empty space there for now. This will be my first year sailing the boat so I'll wait to see what I can do with it. Maybe shelves and storage or a place for a cooler.

I almost went the way rich did, but when i began to put the boat back together i felt that the separate head sink just added a touch of class and besides my wife wanted it, so i ended up putting it back in. I did exactly what you are describing, i used the old hand pump for the head sink, put in the gusher foot pump under the galley sink, and cleaned out my tank with bleach water, filled it with rum (not really), and replaced the hoses. I really like the foot pump.

We went with more storage

I'll go the other way on this one. On our last boat, an O'day 27, I'm sure quite similar to your 25, we had the two sink layout and I just felt that having two sinks was redundant on a boat of that size. Storage is already at a premium and I felt that that space would be better served as a stack of drawers. See the photos.

yes that big rubber pedal slides off, so you just cut a somewhat elongated hole, stick the lever through, then put the pedal back on.

Regarding the drawers, that is pretty cool...i like that

regarding the spigot, i had to order one to go with the pump. it cost way more than it was worth, and the base was much smaller than the original one so that i had to make a "cover" for the hole in the countertop, and then drilled smaller hole through that for the new spigot. I am not at the boat otherwise i would attach a picture.
also notice that it is a left sided or right sided attachment for the inlet hose on the foot pump, if i remember correctly. I didn't notice that when i ordered it and just lucked out and got the right one.
