What is on there is not good and it is good that you are replacing it. The 26's have 5/32 wire on the shrouds and 1/8th on the forestay and backstay. Not sure about the 25's.

...and the 1X19 stainless is what you want with thimbles and sleeves that are crimped on if you stay with the chain plates that are on the boat. I stayed with the stock stuff there as it is bullet proof and is suppose to be easier and better for a trailered boat if you are setting it up and down vs. the turnbuckles. The chain plates aren't that hard to adjust (just a few minutes) and once adjusted should stay adjusted for a long time.
If you go with the turnbuckles you are going to have to go to 'rotary swaged fittings and have the lines made up as you can't do that at home (more expense for all of it) or go with fittings that you can do at home, like the Sta-Lok and that are also expensive. I don't see anything to gain by going that route.

....like the one in the link for about $55. I can't remember if I got it from them or someone else. Do a search. It is easy to use. John on here gave me the tip of using the "U" shaped wire clamps that are on your wires to help make up the new rigging untill the sleaves have been swaged on. The tool is easy to use. If interested I'll put up a few pictures of the project.
For sure replace that rigging, doesn't look safe to me,
