I would like to change my shroud from turn buckle to 10 hole stay does anyone know what length to make my shroud & forestay?

So, if I understand you, you have turnbuckles on both shrouds and the forestay?
So put the shroud adjusters on the 2 shrouds, and leave the turnbuckle on the forestay. You'll need it to adjust and tension the rig.
I would start by measuring the existing shrouds at current turnbuckle settings to get you in the neighborhood. Probably having a friend to hold the end of the tape measure would help.
Then, do your final adjustments based on the amount of weather helm you feel. About 6º of weather helm is good. UNLESS you can find a tuning guide from www.daysailer.org that provides a mast rake measurement, generally from masthead to transom.

Why not stick with the original style infintely adjustable turnbuckles?? I've used those blasted "shroud-adjusters" on a small sailboat and found them inconvienient and troublesome, the first time that I rigged that boat (don't laugh, a 9' trimaran!) I stepped the rig before launching and tensioned hte rigging, well of course when I got the boat in hte water the shouds were now too loose. So, I removed the clevis pin from one of the adjusters and promptly lost the pin overboard! Now, how could I keep the rig standing while I retreived a new clevis pin from my spares? I did it somehow, but vowed to never again rig a boat with those "shroud-adjusters". The first thing I would do if I ever bought a boat that had them would be to replace them with real turnbuckles! I have never had a problem with the turnbukles on and of my boats that had them, and the infinite adjustability make them 100% better than the shroud-adjusters!
I realize that you have used the shoud-adjusters on your Hobie Cat, and I'm sure they worked OK, but based on my experience, they are not going to really work out on a Day Sailer, stick with the much better turnbukles as originally setup.
