I'm looking to buy as big a boat as I can with such a low draft - 3 and 1/2 feet. This is to take people out on the lakes - any suggestions would be great, I'm hoping for something over 36'

Multi-hull?

Big and shallow - that's what they do well. Geof s/v Day-O

A center-board keel may be your best bet.

I seem to recall that there are some 30+' boats with retractable keels (centerboard, etc.) that are less 4' draft with the centerboard up, and over 7' with it down. Tartan to name one comes to mind. ~ Happy sails to you ~ _/) ~

Hunter H260

The H260 has a draft of 1'6" keel up and 6'.5" down. Check it out!

Are you looking for a trailerable boat?

C&C built a trailerable 30' with a retractable bulb keel that drew about 2 1/2 ft. I believe it was called a mega 30. Seidelman also built a number of trailerables up to 30' I believe. Capn Jim of Que Pasa.
