I would like to ask a question, i am not an ocean sailor but aspire to what you are doing.
In long passages with predicted very strong winds, i would have thought that taking down the bimini and dodger canvas was a priority as well as securing the dinghy to the deck, in an attempt to reduce windage, is my thinking completely wrong?

In my mind, yes. It is like having long overhangs, weak sterns, bathtubs for cockpits and other design features from a bygone era. Cockpit enclosures and davits can be built extremely robustly, and a properly designed (modern) sailboat will stand-up much better in a heavy blow, even with the additional windage, than will a "traditional offshore boat" without.
