Can somebody recommend a good way/material to reaseal the cover of the original fresh water tank? (under the the aft berth) It was a nightmare to remove it, and I am looking for some material/seal so it will be easier next time. Thanks.

I'd make a rubber gasket and secure with screws
But silicone is an acceptable sealant that won't leech any toxic chemicals into your water.

Rafi: I am in the process of doing that exact thing on a H'31. I will take pictures. I am planning on removing the lid (yes it is a PIA). Then I will fill all of the existing holes in the molded tank (not the lid) with Marine-tex and redrill them. I have ordered some butyl rubber 1.5 inches wide that I will make a gasket with. I plan on using some type of sealant and will reset all of the screws.

The product is "butyl rubber". I ordered 20' (probably 4-5' more than I needed). The company is Gardico Inc. in Seattle (home of the HOW Web Site). Their Part id was S48RX-0111-604 Strip 60D Butyl 1/8" x 1-1/2" 1/8" thick x 1-1/2" wide. The cost is 2.12/ft The total was $50.93 including shipping. Their phone numbers are 206/283-5850 fax is 206/283-4625. If you reference invoice 76926 they should be able to duplicate the order. The contact is Ron Estes. I will be installing this on the weekend after the holiday. I will try to take some photos to show the process.
