So I am currently overhauling my first boat (75 Bristol 22 Caravel) and I am replacing the seacocks ... So I get what a seacock is, but how do they work exactly? For example ... My galley sink drain connects directly to a seacock with a valve, but if the valve is open how does it keep sea water out?

I would expect that the bottom of the sink is above the water line even when heeled over. Waalaa water will not flow up hill

Yep... what c_witch said. The valve is a safety feature in case the hose breaks or a fitting fails. If the failed part is below water line, then your boat will flood and sink. So you probably want to be in the habit of closing the valve when leaving the boat.
Also, in heavy weather, slamming seas could drive water to spit out the sink drain. So this is another case for wanting to close the valve.
