Sailing Polars
A set of graphs (in polar coordinates one for each wind speed) that shows the boat speed for all wind directions. The plot is a function of the apparent wind direction and the boat speed. For every direction (0-360 degrees) of possable apparent wind there is a plot of the potential boat speed.

Polars
...give you the correct sail choices for various wind conditions and angles and the VERY important target boat speeds. Targets are the way you sail your boat for best VMG. SV Murmur: Hunter doesn't have polars for any of it's boats. I've tried for years to convince them that they're needed. Try US Sailing, they have polars for many production boats.
