The rudder on my C&C 32 has been very stiff for some years. I finally pulled the rudder out and the problem is old hardened grease between the stainless steel rudder post and the tube into which it fits. So I have two questions. 1) What material is the external tube made from. Is it metal or plastic? and 2) What should I use to degrease the rudder?

Use plain old Mineral Spirits. It does wonders for removing old grease and is a pretty benign solvent. A scotchbrite pad makes it even more effective.
After cleaning,suggest you re-lube with lanolin based waterproof grease.Lanolin resists washing away by water.
