Rudder Bushings

I have an O'Day 27 (1977) that I have been overhauling. I finally got around to dropping the rudder and, as expected, the bushings are shot and rudder stem needs a trip to the machine shop to be cleaned up a bit.
I know there have been a lot of posts on here over the years about the bushings; but, none of them seem to quite answer my questions. So, how do I extract the bottom bushing? Must it be pushed through to the top of the tube or can it come out the through the bottom of the tube? Also, I found the set screw for the top bushing very easily. However, if there is a set screw for the bottom bushing, I cannot find it. Any suggestions?
I have a new set of bushings from DR Marine. Given the poor state of the existing bushings, I cannot determine which bushing goes where. There are three new bushings, one, a cylinder with no collar, is about 2" long. The second, which does have a collar, is about 2.5" long. Finally, the third is about 0.25" high. All have same inside and outside diameters. Where should they each be mounted?
Many thanks
