Rookie questions - deck plate & outboard shaft length for a 27

Recently acquired a 1978 Catalna 27 that needs attention. I can't find a replacement deck plate for the bow - seems to be smaller than the standard 3" size that marine supply stores carry. Does anyone know where I can find a replacement? Or will I have do cut a larger hole and replace with a larger size? Also, I need to replace the original outboard - a 20" longshaft. Can I shop for a 20" or 25" long shatf to replace it or will the extra 5" add drag and decrease performance? Also, does anyone know were I can get manuals on an old 27? Thanks, Pope
