Is that on the bow? Looks great but at anchor wouldn't the heat, grease, sparks and smoke blow back into the boat and cockpit?

That's the whole idea...The smoke grease and sparks are to discourage misquitos and other flying insects.

Maintenance
Soling 42, I like the looks of your beer launching device much better, and it looks multifunctional. I think they call them beerwenches. Unfortunately I know for a fact that the maintenance can be real high and reliablity can change like the weather! Nevertheless I like to have mine aboard.
