Theoretically it can be done, not sure I would want to. First challenge is to get the shaft loose and slid back enough to slide off the stuffing box and hose. Once the shaft is slid back you will want the stuffing box locknut loose and then the packing box loose so that it slides easily. But leave it connected to the hose. Disconnect the hose only at the back, at the stern tube. Might take some twisting to break it loose after the clamps are removed. Then have rags ready to stuff into the space around the shaft and into the stern tube. Lots of water will get in but the bilge pump should have no problem handling it. It will take a little time to get the new hose back there and the stuffing box back onto the shaft. Yeah, I could do that.

The H30's have a skeg mounted rudder, the shaft is not going to go back very far.

Jonny's point occurred to me. I did not mention it because all of the pictures that I have seen indicate plenty of slide back room. In or out of the water you will need about four inches or the length of the bronze stuffing box. The hose is flexible enough to come off in that space. Don't mess with cheap hose. Buy hose designed for keeping your boat from sinking.

shaft log hose

No, automotive hose is not ok. I know many people use and get away with wire reinforced marine exhaust hose for this but you should really use what's sold in short sections as "shaft log hose". It's more than likely some sort of industrial/hydraulic hose. The difference being that it has very thick walls and almost every layer is fabric reinforced. This helps prevents the hose from buckling/failing should the shaft and packing gland get too tight or stick and produce a twisting force on the hose.
