I don't know where you are located, and that could make a difference. On different boats, I have had North Sails, and have been pleased with them, both for racing boats and cruising. I'm not familiar with Elvstrom sails so I cannot speakfor them. The OEM sails on my present boat are Neil Pryde. They have held up well over time. The only repair was the replacement of the sacrificial UV protective panel on the working jib.

I am sailing in Aegean Sea. Turkish Coasts and Greek Islands. In Turkey's marketing the most well known sail maker companies are North Sails, Elvstorm, Doyle, UK Sails and some Turkish Companies like Q Sails. When I contact them, I understand that they declare to use the same materials and they are all very proud of their sewing machines. etc. But, I try to understand the difference. Because, naturally as a well known companies like North gives price that almost %25-30 more expensive. Is it because of a well known mark? Or what?

North sails are of good quality, and seem to be consistent in their cut. There is no doubt that you are paying for the name. Most of the North sails that I have purchased were on winter discount plus a price break because our fleet ordered a significant quantity of the same sail. The actual fabric from one maker to another is probably out of the same mill anyway. All the makers will try to tell you that their design is the best for one reason or another. The key ingredient is the type of working relationship you can cultivate with whichever loft you select.

+1 on North Sails. We have their Norlam sails which are far superior to the NP OEM sails.

Also - at least in the US the price is negotiable by up to 25%. They consider that the 'boat show' discount. Ask (for the discount) and you shall receive. Also helps if you have a competitive price quote.
