My vega (1707) has been retrofitted by a previous owner with a quarter
berth on the port side. Basically they removed the stove, cut out the
bulkhead, and added a glassed-in plywood bunk where the quarter berth used
to be. They then made a very shallow (say 6" deep) box on the port cockpit
locker, it is handy for winch handles and such.
I will say it is a tight squeeze in and out of the bunk. Best for kids,
but it does increase the number of bunks available. The side issue to
doing this, is to still have adequate cooking space, it was necessary to
increase the starboard side counter length by about a foot and add a small
stove there (he installed a wallas cooktop/heater) This shrinks the length
of the starboard settee by about a foot, making it too short for a grown
man to sleep in comfortably.
If you don't have an engine in the bay anymore, I would think this would
make better storage than a bunk space (say sail storage or an additional
water tank). Combining the port side and the space where the engine goes
into one bunk could be pretty odd. I'm also not sure what it would do to
the structure of the boat - removing that much of the bulkhead.
