I have tried to save all of your recipes and provisioning tips. I use the link you posted for canning safely to settle arguments among the neighborhood gardeners (I kinda live in a cornfield) and HOPE that someday Phil will give us a Recipe or Provisions forum...hint, hint, hint:)

Thanks for the tips, YUM

The meat in the jars was picked off the boiled bones of three chickens that I boned out for boneless chicken. I got the 5 pints of soup and 3 quarts of stock. and 9 pounds of boneless chicken for the freezer. For 12 dollars

SirWM:

We did have a forum for recipes in the past. There were some good ones out there too. Maybe our honorable Webmaster will resurrect it for us?

Phil: Where did it go? (gone, but NOT forgotten)

With a sharp knife I removed the meat from the bones of the chicken and with a lemon, basil, white wine, soya sauce and black pepper marinade had this for supper, off the grill at home.

When my wife and I cruised in Cal she used to make up meals, and freeze in Sealameal bags. The best part is you can boil in the same bag, kinda like Green Giant. You can still buy this appliance. Once we cruised to Santa Cruz Island off Santa Barbara. Boy the stories I have on that trip. Ask me sometime about the Blue Suede deck shoes. Encountered some commerical Abalone divers who were sick of eating Abalone. Will never happen to me. We traded some Spaghetti, Chili, Stew, chocolate chip cookies and a quart of milk for 8 big pink Abs. The next day we tenderized, breaded and fried them and the entire fleet came by in their dingies and picked some up. Let's see ya do that Mickey D. Fair Winds, Old Salt...
The only man who always got everything done by Friday was Robinson Crusoe...

Some foods do well by freezing and some work well canned but sometimes fresh is the only way to go. The chicken had been frozen ready to prepare, was thawed for today. The bones went into the pot for making the soup.

We did a cruise down the east coast of Florida last winter and ate very well on our 26 ft boat. We have a one burner butane burner, propane BBQ, and a small microwave running off a Honda EU2000. The microwave was great to do oatmeal in the morning or bake a potato so it could be crisped up on the BBQ. We found smoked pork chops kept very well in our cooler and were tasty. We "baked" pizza on a ceramic tile cut to fit the BBQ grill using a piece of parchment paper under the dough. The Uncle Ben's rice worked well as a side dish, served with a fresh salad and steamed vegetable. We liked french toast with a bit of cinnamon and vanilla the best for breakfast.

What kind of pressure cooker do you need for canning ? I have a small one but it does not have a gauge so I suppose it can not be used for canning ? Do you seal the jars before they are put in the Pcooker ?

Good looking food and nice presentation.
You should have at least an 8 quart pressure cooker/canner. This link is about the best I have seen for the "How to" of canning. The need to adhere the details of the process are the key to successful and safe canning.

edit to add: I can process 7 regular pints in my 8 quart canner and about 10 half pints.
