What is it like planing on that boat downwind? I've seen the videos, but how does it feel? Does it ever feel like the boat is sailing faster than you can control it?

Its most noticeable in what you DON'T feel.

On regular boats the loads get bigger and the boat gets squirrelier more the wind comes up. That's because the boat stops speeding up. When you're downwind in 20+ knots and at hull speed, you've got your hands full. The Pogo just goes faster, and the transition from displacement mode to planing is a gentle 'bump' forward as the boat pops out and you gain more speed. Then you just hear the 'Hsssss' of the wake BEHIND your boat and you scoot off in completely stable fashion. It's 100% one-hand one-person controllable. We've made meals and eaten while never dropping below 14 knots.

On a 40-foot blue-water cruiser.

It is a nice looking boat. But I have no need for speed. I do envy those that can afford/sail one.

In most conditions no.

In 14-29 knots true wind, the boat is very docile and skips up on a plane and stay there, happy in a very wide envelope of true and apparent wind speeds and angles, as well as sail trim and crew position. It really is cruising. And the boat is in the teens, speed-wise.

In +30kts TWS its GAME ON and you have to be more on your toes. The boat will be under gennaker and reefed main, and doing 20+ knots. At this point you're really making sure you don't do something stupid, look way ahead because crap comes up quick, and are talking through maneuvers. That's the big one. Gibing in 30 knots is not a beginner move.

I don't know what all the fuss is about. I can change lanes with the boat (on the trailer) in a 30kt breeze. It's not unlike a gybe. Not even close.
Is that a lineup at the lotto booth? :)
